{spinach and tortellini salad}

One of my favorite recipes to make when the weather is warm is spinach tortellini salad. This quick dish is super filling and only takes a few steps and little time to whip up. I’ve made this for simple dinners at home, potlucks, bridal showers- you name it, it works!

Here’s what you’ll need: 

5 cups fresh baby spinach
2 cups cooked tortellini- I like to use Buitoni’s Three Cheese, but any tortellini that you like will work! 
1/4 cup poppy seed dressing- I’m a fan of Briannas Rich Poppy Seed

Steps to make: 
1. Cook tortellini according to package directions, drain and cool completely 
2. Toss tortellini, dressing and spinach until thoroughly mixed
3. Chill for at least 30 minutes before serving

This recipe pairs really well with grilled chicken if you’d like to add a bit of meat to the salad! Enjoy! 🙂
